A Healthy Vegetarian/Vegan Friendly Recipe

Just in time for your first spring picnic- this is a light but filling salsa style dish. Super simple to make. It’s made with all natural ingredients and was a huge hit at the last get together I threw. Perfect to make a big batch of…it saves for up to a week! This is great as a snack with tortilla chips, or as a lunch on toasted baguette slices, flat bread or pitas.

Texas Caviar makes 5 cups

2 cans (15.5 oz each) black eyed peas, rinsed and drained

1 can (10 oz.) diced tomato & green chilies, drained

1 medium green pepper, finely chopped

½ cup Italian dressing

2 tablespoons lime juice

¼ teaspoon salt & pepper

1 medium avocado, peeled & cubed

-Combine all vegetables except avocado in large bowl.

-Combine dressing & spices in small bowl.

-Pour dressing over veggies, cover & refrigerate at least 1 hour.

-Stir in avocado just before serving.
