With the weather warming up (or already sweltering depending on the day) we are all looking for something to cool us down. Growing up, my siblings and I were always taught not to waste anything whenever possible, especially food. When we came home from school there were no chips and dips waiting for us, it was always a piece of fruit (most often apples or bananas) along with some peanut butter if we liked. If the bananas became overripe my mom would cut them in half, put a popsicle stick in each one, wrap them in foil and put them in the freezer. Banana popsicles became a favorite in our household. However, now that I am older and popsicles no longer hold the same appeal for me, what am I supposed to do with the ripe bananas sitting in my kitchen? Smoothies of course are an excellent option, but I have recently discovered Banana Peanut Butter Ice Cream. It's amazingly simple with only 2-3 ingredients, with a creamy ice cream like texture and true to my upbringing. So in honor of my mom and all of the wonderful lessons she has taught me over the years........try this excellent recipe with your family and add something you love into the mix.

2 large ripe bananas sliced and placed into the freezer for 3-4 hours until mostly frozen solid
1 Tbs Peanut Butter (other options that are tasty include: dark chocolate, almond butter, or berries if you like)
1-2 Tbs of non dairy milk if needed for blending purposes (I use flax milk but any type should do)

Place all ingredients into a food processor, blender, or in my case a Nutri-bullet and blend until smooth. Enjoy!
