Valentine's Day is just around the corner, and we have a yummy treat to sweeten things up that is very low in sugar, dairy free, gluten free, corn free, soy free, egg free, and vegan if modified....full disclosure there is a good bit of fat from the coconut milk, but hey it's a holiday!

Berry Good Parfait -servings 3

Ingredients

  • 1 can full fat coconut milk refridgerated for a minimun of 6 hours
  • 1/2 t vanilla extract
  • 1 T honey or 1/2 T maple syrup for a vegan option
  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries

Instructions

  1. Open the can of coconut milk from the bottom to drain the liquid.
  2. Scoop out the rest of the solidified coconut milk into a large bowl and whip until the consistency of whipped cream. (Don't get discouraged this took me about 10 minutes of whipping, but it will get there.)
  3. Mix in the vanilla extract and the honey or maple syrup
  4. In another bowl take 1/2 cup of raspberries and mash them
  5. Take 1/2 of the coconut cream and fold in the mashed rasperries
  6. Layer the rasperry/coconut cream, fresh berries, plain coconut cream and more berries.
  7. Enjoy!
